No-Bake Peanut Butter, Oatmeal and Chocolate Chip Energy Balls

Perfect for summer snacks and lunch boxes too!

As a mom, I'm always on the hunt for healthy treats. My kids love to snack and enjoy treats, of course, and I prefer for them to have something a little healthier whenever possible. This treat covers those bases for me! Plus, they are quick — I made a batch of 20 balls in about 10 minutes. Perfect for summer snacks and lunch boxes too!

No-Bake Peanut Butter, Oatmeal, and Chocolate Chip Energy Balls

Ingredients:

  • 1 1/2 cups oats
  • 1/3 cup honey
  • 1/2 cup peanut butter
  • 1/4 cup chocolate chips
  • 1/2 teaspoon vanilla

Directions:

  1. Add all ingredients to a medium bowl and mix well until well combined.
  2. Roll mixture into 1- to 2-inch-sized balls and place on a plate or baking sheet.
  3. Refrigerate for 20 minutes to firm them up.
  4. Watch them disappear!

They will store well, sealed, in the refrigerator — if you have any leftovers.
