Onion Sandwich Recipe and Review of RealSweet® Vidalia® Onions

Our family recently had a chance to use RealSweet® Vidalia® Onions thanks to our Sponsors Shuman Produce and Produce for Kids®. And we had a really fun time finding ways to use our onions! I asked Honey what we should make, and her first thought was "Onion Sandwiches". Well, I didn't know what that meant, but she came up with a plan and then I explained how to make grilled cheese sandwiches and then we put those ideas together for this tasty treat!

What makes these onions so special? Onion Sandwiches

Ingredients
Bread
Onions
Herb goat cheese (or herb flavored cream cheese)
Butter
Olive oil
Salt and pepper

Directions
1. Being very careful for your fingers, slice or dice the onions, whichever is your preference. Honey chose to dice them.

2. Cook the onions in a bit of oil over low to medium heat until softened and lightly browned. Add salt and pepper to taste.

3. Butter two slices of bread, then spread goat cheese on the other side of each slice.

4. Place one slice of bread in the pan with the butter side down, add a scoop of cooked onion, then top with the other slice of bread, with the cheese side down.

5. Cook the sandwich over low to medium heat until both sides are browned.

6. Let cool for a couple minutes, then cut (if desired) and enjoy!
