Who doesn't love an ice cream sandwich? This yummy alternative is a great treat for kids and adults and it's dairy-free!

- 2 - 2-1/2 soft bananas
- 2 Tbsp of peanut butter or almond butter (tried both and kids loved them)
- 16 graham crackers broken in half (try cinnamon or chocolate)
- Handful of mini chocolate chips (optional)
Instructions:
- Peel and mash the bananas in a medium bowl.
- Add peanut or almond butter.
- Mix with a spatula until blended.
- Add chocolate chips (optional) and stir.
- Spoon a dollop of the mix onto half of a graham cracker and place the other half on top.
- Repeat until ingredients are gone.
- Place in freezer for at least 2 hours. (Middle will not be mushy when they are ready.)
The mashed banana takes on an ice cream consistency when frozen, resulting in a twist on an ordinary ice cream sandwich that everyone will enjoy!
