A Fun Twist on the "Ice Cream" Sandwich!

This isn't your ordinary frozen treat

Who doesn't love an ice cream sandwich? This yummy alternative is a great treat for kids and adults and it's dairy-free!

Ingredients:
  • 2 - 2-1/2 soft bananas
  • 2 Tbsp of peanut butter or almond butter (tried both and kids loved them)
  • 16 graham crackers broken in half (try cinnamon or chocolate)
  • Handful of mini chocolate chips (optional)
Instructions:
  1. Peel and mash the bananas in a medium bowl.
  2. Add peanut or almond butter.
  3. Mix with a spatula until blended.
  4. Add chocolate chips (optional) and stir.
  5. Spoon a dollop of the mix onto half of a graham cracker and place the other half on top.
  6. Repeat until ingredients are gone.
  7. Place in freezer for at least 2 hours. (Middle will not be mushy when they are ready.)
The mashed banana takes on an ice cream consistency when frozen, resulting in a twist on an ordinary ice cream sandwich that everyone will enjoy!
