Tortellini Soup

There's nothing better on a cool fall evening than a warm bowl of soup! This Pinterest-inspired recipe is easy and tasty. Start it in the morning and it will be ready to eat before or after late afternoon activities.

Ingredients

  • 2 cans chicken broth (or 4 cups of homemade broth)
  • 1 jar of your favorite spaghetti sauce
  • 1 lb ground meat, browned (beef, chicken, italian sausage or any combination that your family loves!)
  • 1 brick (8 oz.) cream cheese
  • 8 oz. fresh mushrooms (sliced)
  • 1-2 cups frozen spinach
  • 1 pkg. frozen cheese tortellini
  • Parmesan and/or mozzarella cheese for topping


Directions

  1. Put chicken broth, spaghetti sauce, browned meat, cream cheese, mushrooms and spinach in the slow cooker on low for 6 hours. If you are home, stir throughout the day.
  2. Turn the heat up to high for 2 hours.
  3. 20 minutes before serving add the frozen tortellini.
  4. Serve in bowls topped with parmesan or mozzarella cheese.

Yield 5 servings
