Pita Pizza

Ingredients:

  • 10 inch Whole Wheat tortillas
  • Part skim mozzarella cheese
  • Pizza sauce
  • Cut up: mushrooms, peppers, onions

Turn oven on broil. Poke tortillas with a fork a few times. Place on oven rack and broil until lightly brown on one side, then flip to other and toast until lightly brown. Take toasted tortilla out of the oven. Set oven to bake 400 degrees.

Spread pizza sauce on toasted tortilla. Add cut up veggies. (If you prefer, you can sauté the veggies in first in 2 tsp of olive oil). Sprinkle with about 1/2 - 3/4 cup mozzarella cheese. Place in oven and bake for about 8 minutes until cheese is melted.  Cut and serve.

Mexican variation:

Spread toasted tortilla with fat free refried beans. Add your veggies on top. Spread about ½ cup of salsa over the top. Sprinkle with about 1/2 - 3/4 cup mozzarella cheese. Place in oven and bake for about 8 minutes until cheese is melted. Cut and serve.
