My good friend gave me this recipe a few years ago and it wasn't until another friend told me recently that she makes it all the time AND that her son who is in culinary school has added it to the cafeteria menu (calling it Chicken a la Kelly!) that I decided I had to try it again! It was better than before! I changed things a bit and I'm really happy with this outcome. So was my husband!

Easy Cheesey Please Me Chicken:

In your crock pot add a package of boneless, skinless chicken breast tenders, a jar of salsa and a package of frozen corn, (if you want to, add a can of black beans, drained and rinsed) - cover and set on low heat for 6 hours. During the 5th hour add a block of cream cheeseand stir. Continue to stir on and off for the last hour. Serve the dish in taco shells and sprinkle with shredded cheddar cheese!

The possibilities are endless for this quick dish. You can serve it over rice or in lettuce to make wraps, alone like a heavy soup, in soft tacos, etc. Some other fun garnishes: avocado, diced tomatoes or chopped onions! It's great the next day as a filling for quesadillas or nacho topping!

Note from Laura: We just had this same thing for dinner, but converted to soup and I added some shredded pepper jack cheese instead of cream cheese and we topped it with plain yogurt (sour cream) and crushed corn chips.
